Mit insgesamt 17 gelisteten Restaurants unter den Top 250 zeigt sich Deutschland erneut als feste Größe in der europäischen Spitzenküche – mit bemerkenswerten Verschiebungen im Detail:
- Auf Platz 7 rangiert weiterhin Victor’s Fine Dining by Christian Bau in Perl. Christian Bau bleibt einer der stilprägendsten Köche des Kontinents – mit seiner Synthese aus französischer und japanischer Küche.
- Nur einen Rang dahinter: die Schwarzwaldstube in Baiersbronn (Platz 8). Torsten Michel setzt hier die Tradition großer französischer Küche fort – modernisiert, aber unaufgeregt und klar.
- In Wolfsburg behauptet sich Aqua unter Sven Elverfeld auf Platz 37, mit kraftvoller moderner Küche zwischen Aromatik, Handwerk und Idee.
- Das Waldhotel Sonnora in Dreis (Platz 33) beeindruckt erneut mit französischer Klassik in fast schon asketischer Präzision – Clemens Rambichler hält das Niveau in bemerkenswerter Konstanz.
