Spicy souvlaki with pistachio pesto

A few weeks ago, I received quite a heavy delivery: the new electric grill from Otto Wilde. The new electric O.F.B. comes with two separately controllable infrared radiator groups. After only five minutes of preheating, temperatures of up to 800°C can be reached.

Before I plunged into the adventure of top-heat grilling again myself, I also took a look at the newly published cookbook by Otto Wilde. Accordingly, in “Oberhitze” everything revolves around the preparation of simple dishes with a lot of heat. From top.

And thankfully, I can share two of my favorite recipes from the book with you here. The first part is about souvlaki, the classic grilled skewers from Greek cuisine. With the right meat, in this case Duroc pork tenderloin, and sufficient heat, this then has little to do with the dry skewers that one otherwise quickly associates with it….

Spicy souvlaki with pistachio pesto

For four people

Ingredients souvlaki

  • 600 g Duroc pork tenderloin
  • 2 garlic cloves
  • 1 chili pepper
  • 1 tsp dried oregano
  • 1 tsp paprika powder sweet
  • 1 tablespoon lemon juice
  • Salt and pepper
  • 1 tsp chili flakes

Preparation souvlaki

Cut meat into finger-thick slices. Peel and finely chop the garlic. Clean and finely chop the chili. Mix both with oregano, paprika and lemon juice in a large bowl.
Add the meat pieces to the marinade, toss to coat, and marinate, covered, in the refrigerator for about 2 hours.

Remove the pieces of meat from the marinade, pat dry and place on grill skewers. Preheat the O.F.B. for 3 minutes on the lowest setting. Hang the drip tray filled with water under the grill grate. Place skewers on grill grate and grill 3 minutes per side on Meat-O-Meter level 5. Turn off heat
and let the skewers rest in the grill for another 2 minutes. Season the skewers with salt, pepper and chili flakes.

Ingredients pistachio pesto

  • 30 g pistachios
  • 20 g parsley leaves
  • 15 mint leaves
  • 30 g parmesan
  • 100 ml olive oil
  • Salt and pepper

Preparation pistachio pesto

Coarsely chop the pistachios. Finely chop the herbs. Finely grate the Parmesan cheese. Mix all ingredients with the olive oil. Season the pesto with salt and pepper.
