SPICE BUTTER
- 1 piece of untreated orange peel
- 200 g soft butter
- 1 tsp fermented paprika
- 2 cardamom pods
- 10 sage leaves
Cut the orange peel into 6 small pieces. Gently heat the butter with all the ingredients and leave to infuse at a low temperature for about 30 minutes. Be careful not to let the butter get too hot, do not make a nut butter.
POTATOES
- 500 g small new potatoes (e.g. La Ratte, Bamberger Hörnchen)
- Salt
Wash potatoes and boil in sufficient salted water until soft, about 20 minutes. Drain the water and place the potatoes in the gastro dish. Preheat the Beefer to full power. Slide the potatoes in their skins to the lowest rack level in the Beefer. Turn several times and brown for about 5 minutes.
LIVAR RIBEYE STEAKS
- 2 LiVar boneless ribeye steaks (approx. 300 – 400 g each)
- Murray River Salt
Preheat the Beefer to full power. Grill the ribeye steaks one at a time on a medium rack for about 60 seconds on each side. Repeat three times until the desired degree of browning. Let the steaks rest, turning them several times, until the appropriate core temperature is reached. If desired, re-bread the ribeye steaks before serving. Season with Murray River Salt.
