Mercado Mallorquín

The two Kitchen Guerillas Koral and Onur Elci have committed themselves to the culinary exploration of Mallorca two years ago. Since then, they have embarked on numerous trips in search of authentic treasures on the Balearic island.

Last week, they loaded up a big van full of a selection of their favorite products and producers and sent it on its 2,000-plus-mile journey back to Hamburg. And fortunately, the car arrived at the base camp of the Kitchen Guerillas a few hours before the Mercado Mallorquín began.

In the meantime, the two entrepreneurs have founded another limited liability company in Spain and established and expanded contact with many small producers. At our joint dinner, we now had the opportunity to get to know people and products better and to celebrate a small Spanish feast.

The spectrum ranged from olive oils to Mallorcan wines, spices, beers to fancy sausages and specially imported vegetables.

Several producers have made the journey to Hamburg. Included is Bodega Ribas, founded as early as 1711 and therefore the oldest winery on the island, with three wines from its large repertoire. The Especias Crespí with its spices native to Mallorca and organic. Boscana Cervesa Evolutiva contributes the world’s first fig craft beer. The Olinevöl comes from Predio Son Quint from the Sierra Tramuntana. Mallorcan charcuterie products such as butifarra and sobrasada, produced from the meat of specially bred “Porc negre” pigs has sent Can Company Mallorca on the road. The culinary Mallorca expert Deborah Piña lemon led through the evening and explained interesting background information about the products.

Can Company’s sobrasada and butifarra kicked things off. Exciting Mallorcan charcuterie, some stuffed with cheese or fruit.

But of course, the products were also used for cooking. In Kitchen Guerilla style, small dishes and large communal plates alternated. Accompanied by three different wines from Bodega Ribas.
