FLAT IRON STEAK
- 2 Flat Iron Steaks (approx. 350 g each)
- Salt (e.g. Murray River Salt)
Salt the steaks on both sides. Preheat the Beefer to full power. Grill the flat iron steaks one at a time on the grill on a medium rack for about 60 seconds on each side until the desired browning is achieved. Then let rest until the appropriate core temperature.
WAGYU HOLLANDAISE
- 150 ml dry white wine
- 10 ml verjus
- 2 mace flowers (mace)
- 6 allspice seeds
- 1 bay leaf
- 5 egg yolk
- Sea salt
- Cayenne pepper
- 300 ml liquid wagyu fat (alternatively clarified butter)
- Yuzu juice (alternatively lemon juice)
For the hollandaise, first prepare a reduction by bringing the white wine and verjus to the boil with the spices. Then reduce the liquid by half and pour through a fine sieve.
Place the egg yolks with the reduction, 1 pinch each of salt and cayenne pepper in a whisking bowl and whisk in a hot water bath until the mixture is creamy and combined. Remove from the water bath, gradually stir the hot wagyu fat (60-70°C) into the mixture. Finish with a few squirts of yuzu juice and season again.
Sprinkle the Flat Iron Steaks with a little salt, slice and enjoy with the Wagyu Hollandaise.
